Rice o Roni with Pulled Pork
🍖 Pulled Pork Rice-A-Roni (Meal Prep Style)
Ingredients:
1 pork roast (5–10 lbs)
4 cups water
2 boxes Rice-A-Roni (any flavor)
Butter or oil (as listed on each Rice-A-Roni box)
Instructions:
1. Cook the Pork
Place the pork roast in the slow cooker.
Add 4 cups of water (no salt, pepper, or seasoning).
Cook on HIGH for 8–10 hours, until the pork is tender and shreds easily.
Remove the pork and shred it with a fork.
Save the cooking liquid — it will replace the water when cooking the Rice-A-Roni.
2. Cook the Rice-A-Roni
In a large skillet or pot, melt the butter as directed on the box.
Add the Rice-A-Roni mix and brown lightly.
For each box, use the amount of liquid listed, but replace it with the pork cooking liquid (add plain water if needed to reach the full amount).
Add shredded pork to the simmering rice — about 2–3 cups total per 2 boxes, or adjust to your taste.
Simmer until the rice is tender and liquid is mostly absorbed.
Let it cool before portioning.
3. Portioning for Meals
Each box of Rice-A-Roni = 2 meals, so:
2 boxes = 4 meals
4 boxes = 8 meals, etc.
Store in airtight containers in the fridge (up to 4–5 days) or freezer (up to 2 months).
Reheat in the microwave or on the stove with a splash of water.
